Beef Stir-fry with Teriyaki Sauce

Ingredients

  • 1 lb flank steak
  • 4 cup broccoli florets
  • 2 carrots
  • 1 bell pepper
  • ½ yellow onion
  • 3 clove garlic
  • 1 tbsp fresh ginger
  • ¾ cup teriyaki sauce
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tsp sesame seeds (optional)
  • 4 cup cooked white rice (optional)

Steps

  1. Slice flank steak against the grain into thin strips. In a bowl, toss beef with 1 tablespoon of soy sauce and cornstarch.
  2. Chop broccoli into florets, slice carrots into thin rounds, bell pepper into strips, and onion into wedges. Mince garlic and grate ginger.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beef and stir-fry until browned, about 3-4 minutes. Remove beef from skillet and set aside.
  4. Add remaining 1 tablespoon of oil to the skillet. Add broccoli, carrots, bell pepper, and onion, stir-fry for 5-7 minutes until vegetables are crisp-tender. Add garlic and ginger and stir-fry for 1 minute until fragrant.
  5. Return beef to the skillet. Pour in teriyaki sauce and remaining 1 tablespoon of soy sauce. Stir to coat everything and heat through, about 2 minutes.
  6. Serve immediately over cooked white rice, if desired, and garnish with sesame seeds, if using.
