Beef Taquitos

Ingredients

  • 1 lb ground beef
  • 12 corn tortillas
  • ½ onion
  • 2 clove garlic
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cup vegetable oil
  • 2 cup shredded lettuce (optional)
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)
  • ½ cup guacamole (optional)
  • ½ cup shredded cheddar cheese (optional)

Steps

  1. Brown ground beef in a large skillet over medium heat, draining any excess fat. Add diced onion and minced garlic, cooking until softened.
  2. Stir in chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes, then remove from heat.
  3. Warm tortillas in the microwave for 30 seconds or in a dry skillet to make them pliable.
  4. Place a spoonful of the beef mixture near one edge of a warm tortilla, then roll it up tightly. Secure with a toothpick if needed.
  5. Heat vegetable oil in a deep skillet or pot to 350°F (175°C). Fry taquitos in batches for 2-3 minutes per side, or until golden brown and crispy.
  6. Remove taquitos from oil and place on a wire rack lined with paper towels to drain excess oil. Remove toothpicks.
  7. Serve hot with optional toppings like shredded lettuce, sour cream, salsa, guacamole, or shredded cheese.
