Bistek
Bistek is a savory Filipino beef steak dish marinated in soy sauce and lemon, then simmered until tender and topped with sweet caramelized onions.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 5 tbsp soy sauce
- 1 lemon
- 3 clove garlic
- 3 onion
- 4 tbsp olive oil
- 1 cup water
- 1 pinch salt
- ½ tsp black pepper
Steps
- Marinate beef in soy sauce, the juice of one lemon, and a pinch of black pepper for at least 1 hour, or preferably overnight.
- Heat 2 tablespoons of olive oil in a pan. Pan-fry half of the sliced onions until soft and caramelized; set aside.
- Drain the marinade from the beef and reserve it. In the same pan, sear the beef for about 1 minute per side until browned, then remove and set aside.
- Add the remaining 2 tablespoons of olive oil to the pan. Sauté minced garlic and the remaining raw sliced onions until the onions soften.
- Pour in the reserved marinade and 1 cup of water. Bring the mixture to a boil.
- Return the seared beef to the pan. Cover and simmer for 45-60 minutes, or until the beef is very tender, adding more water if needed.
- Season with additional salt and black pepper to taste. Top with the reserved pan-fried onions before serving hot.
