Ingredients

  • 30 oz black beans
  • 8 corn tortillas
  • ½ onion
  • 2 clove garlic
  • 2 tbsp taco seasoning
  • 1 lime
  • ¼ cup cilantro (optional)
  • 1 avocado (optional)
  • ½ cup salsa (optional)
  • 1 tbsp oil

Steps

  1. Dice the onion and mince the garlic.
  2. Heat oil in a skillet over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Drain and rinse the black beans. Add them to the skillet along with taco seasoning and 1/4 cup water. Simmer for 5-7 minutes, mashing some of the beans for a creamier texture.
  4. Warm the corn tortillas according to package directions.
  5. Squeeze fresh lime juice over the black bean mixture.
  6. Assemble tacos by filling warm tortillas with the black bean mixture. Garnish with cilantro, avocado, and salsa if desired.
