Black Bean Tacos
Hearty and flavorful black bean tacos, perfect for a quick and satisfying meal any night of the week.
Ingredients
- 30 oz black beans
- 8 corn tortillas
- ½ onion
- 2 clove garlic
- 2 tbsp taco seasoning
- 1 lime
- ¼ cup cilantro (optional)
- 1 avocado (optional)
- ½ cup salsa (optional)
- 1 tbsp oil
Steps
- Dice the onion and mince the garlic.
- Heat oil in a skillet over medium heat. Sauté onion until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Drain and rinse the black beans. Add them to the skillet along with taco seasoning and 1/4 cup water. Simmer for 5-7 minutes, mashing some of the beans for a creamier texture.
- Warm the corn tortillas according to package directions.
- Squeeze fresh lime juice over the black bean mixture.
- Assemble tacos by filling warm tortillas with the black bean mixture. Garnish with cilantro, avocado, and salsa if desired.
