Black Pepper Beef

Ingredients

  • 1½ lb flank steak
  • 2 tbsp cornstarch
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar
  • 2 tsp black pepper
  • 4 clove garlic
  • 1 tbsp ginger
  • 1 tsp sesame oil
  • 3 tbsp vegetable oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • 2 scallions (optional)
  • 4 cup cooked white rice (optional)

Steps

  1. Slice the flank steak against the grain into thin strips. In a bowl, toss beef with 1 tablespoon cornstarch and 1 tablespoon soy sauce; set aside.
  2. In a small bowl, whisk together remaining 3 tablespoons soy sauce, oyster sauce, sugar, 1.5 teaspoons black pepper, and sesame oil to create the sauce. Mince garlic and ginger.
  3. Slice bell peppers and onion into thin strips. Heat 1 tablespoon vegetable oil in a large skillet or wok over high heat. Add beef and stir-fry until browned, about 2-3 minutes. Remove beef and set aside.
  4. Add remaining 2 tablespoons vegetable oil to the skillet. Add bell peppers and onion and stir-fry for 3-4 minutes until slightly tender-crisp. Add minced garlic and ginger and stir-fry for 30 seconds until fragrant.
  5. Return beef to the skillet. Pour in the prepared sauce and remaining 0.5 teaspoon black pepper. Stir well to coat all ingredients and cook for 1-2 minutes until the sauce thickens slightly.
  6. Serve immediately over cooked white rice, garnished with sliced scallions if desired.
