Braised Tofu with Vegetables
A savory and comforting dish featuring pan-fried tofu braised in a flavorful sauce with a medley of fresh vegetables.
Ingredients
- 16 oz extra-firm tofu
- ½ cup soy sauce
- ½ cup vegetable broth
- 2 tbsp sesame oil
- 1 tbsp cornstarch
- 3 clove garlic
- 1 tbsp ginger
- 4 cup broccoli florets
- 2 carrots
- 1 bell pepper
- 2 scallions (optional)
- 2 cup white rice (optional)
Steps
- Press tofu to remove excess water, then cut into 1-inch cubes. In a small bowl, whisk together soy sauce, vegetable broth, sesame oil, and cornstarch for the braising liquid.
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add tofu cubes and pan-fry until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.
- Add remaining oil to the skillet. Sauté minced garlic and grated ginger for 1 minute until fragrant.
- Add broccoli florets, sliced carrots, and chopped bell pepper to the skillet. Cook for 5-7 minutes until vegetables are tender-crisp.
- Return the pan-fried tofu to the skillet with the vegetables. Pour the braising liquid over the tofu and vegetables.
- Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce thickens and coats the tofu and vegetables.
- Serve hot, garnished with sliced scallions if desired, and optionally over steamed white rice.
