Ingredients

  • 1½ lb potatoes
  • 4 strips bacon
  • 1 tbsp olive oil
  • 2 clove garlic
  • 1 tbsp maple syrup
  • ½ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp allspice (optional)
  • 1 tbsp parsley (optional)

Steps

  1. Dice potatoes into medium cubes. Place cut potatoes in a bowl of water to prevent browning.
  2. Heat olive oil in a large skillet over medium-high heat. Drain potatoes, add to skillet, and season with salt and pepper.
  3. Cook potatoes for 10-12 minutes, stirring often, until browned and tender. Chop bacon into small pieces.
  4. Add chopped bacon to the skillet with the potatoes and cook for 5-6 minutes until crispy, stirring occasionally.
  5. Reduce heat to medium-low, add minced garlic and allspice (if using), and cook for 1 minute until fragrant.
  6. Drizzle maple syrup over the potatoes and bacon, toss to coat, and cook for another minute to caramelize.
  7. Stir in fresh or dried parsley (if using) and serve immediately.
