Broccoli Cheddar Soup

Ingredients
- 4 cup broccoli florets
- 8 oz cheddar cheese, shredded
- 4 tbsp butter
- 1 cup yellow onion, diced
- 2 clove garlic, minced
- ¼ cup all-purpose flour
- 4 cup chicken or vegetable broth
- 2 cup milk
- ½ cup heavy cream (optional)
- ¾ tsp salt
- ¼ tsp black pepper
- ⅛ tsp nutmeg (optional)
Steps
- Melt butter in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant. Whisk in flour and cook for 2 minutes, creating a roux.
- Gradually whisk in broth and milk until smooth. Bring to a simmer, then add broccoli florets. Cook for 10-15 minutes, or until broccoli is tender.
- Reduce heat to low. Stir in shredded cheddar cheese a handful at a time until fully melted and smooth. Do not boil after adding cheese.
- Season with salt, pepper, and a pinch of nutmeg if desired. For extra richness, stir in heavy cream.
