  • 4 cup broccoli florets
  • 8 oz cheddar cheese, shredded
  • 4 tbsp butter
  • 1 cup yellow onion, diced
  • 2 clove garlic, minced
  • ¼ cup all-purpose flour
  • 4 cup chicken or vegetable broth
  • 2 cup milk
  • ½ cup heavy cream (optional)
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ⅛ tsp nutmeg (optional)

Steps

  1. Melt butter in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic and cook for 1 minute more until fragrant. Whisk in flour and cook for 2 minutes, creating a roux.
  3. Gradually whisk in broth and milk until smooth. Bring to a simmer, then add broccoli florets. Cook for 10-15 minutes, or until broccoli is tender.
  4. Reduce heat to low. Stir in shredded cheddar cheese a handful at a time until fully melted and smooth. Do not boil after adding cheese.
