Texas Smoked Sausage

Ingredients
- 2 lb smoked sausage
- 1 yellow onion
- 1 bell pepper
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp black pepper
- ½ tsp salt
- ¾ cup BBQ sauce (optional)
- 4 buns (optional)
Steps
- Preheat your smoker or grill to a low temperature (around 225-250°F) for indirect heat. If using a grill, set it up for two-zone cooking.
- Place the smoked sausages on the cooler side of the grill or in the smoker. Smoke for 2-3 hours, or until the internal temperature reaches 165°F, turning occasionally.
- While the sausage smokes, slice the onion and bell pepper into thin strips.
- In a skillet, sauté the sliced onion and bell pepper with a drizzle of oil until softened, about 8-10 minutes. Season with garlic powder, paprika, salt, and black pepper.
- Once the sausage is cooked, you can optionally brush it with BBQ sauce during the last 15-20 minutes of smoking.
- Remove the sausage from the grill and let it rest for a few minutes before slicing.
- Serve the sliced smoked sausage with the sautéed onions and peppers, either on its own or in buns.
