Ingredients

  • 1½ lb beef chuck roast
  • 1 yellow onion
  • 4 clove garlic
  • 8 cup beef broth
  • ¼ cup soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp cajun seasoning
  • ½ tsp black pepper
  • 8 oz spaghetti or ramen noodles
  • 4 eggs
  • 4 green onions (optional)
  • 1 tsp hot sauce (optional)

Steps

  1. Cut beef chuck roast into 1-inch cubes. Season with half of the Cajun seasoning and black pepper.
  2. Heat a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides, then remove and set aside.
  3. Add chopped onion and minced garlic to the pot, sauté until softened, about 5 minutes.
  4. Return beef to the pot. Add beef broth, soy sauce, Worcestershire sauce, and remaining Cajun seasoning. Bring to a boil, then reduce heat, cover, and simmer for 60-75 minutes, or until beef is tender.
  5. While the beef simmers, boil eggs to your desired doneness (typically hard-boiled for Yakamein). Cook spaghetti or ramen noodles according to package directions, then drain.
  6. To serve, place a portion of cooked noodles in each bowl. Ladle the hot beef and broth over the noodles. Halve the hard-boiled eggs and add one to each bowl.
  7. Garnish with sliced green onions and a dash of hot sauce, if desired.
