California Burrito

A hearty and satisfying California burrito loaded with carne asada, crispy fries, cheese, and fresh pico de gallo.

Ingredients

  • 1½ lb Carne Asada (skirt or flank steak)
  • 4 Large flour tortillas
  • 16 oz Frozen french fries
  • 1½ cup Cheddar cheese, shredded
  • 1 cup Pico de gallo
  • ½ cup Sour cream (optional)
  • ½ cup Guacamole (optional)
  • ¼ cup Cilantro, fresh, chopped (optional)
  • 1 Lime (optional)
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • ½ tsp Black pepper
  • 1 tsp Garlic powder
  • ½ tsp Cumin

Steps

  1. Season carne asada generously with salt, pepper, garlic powder, and cumin. Let sit at room temperature for 15 minutes.
  2. Cook french fries according to package directions until golden and crispy. Set aside.
  3. Heat vegetable oil in a large skillet or grill pan over medium-high heat. Sear carne asada for 3-5 minutes per side for medium-rare, or until desired doneness. Remove from pan, rest for 5 minutes, then thinly slice against the grain.
  4. Warm tortillas briefly in a dry skillet or microwave to make them pliable.
  5. To assemble each burrito, lay a warm tortilla flat. Layer with a quarter of the carne asada, a handful of french fries, shredded cheese, and pico de gallo. Add sour cream, guacamole, and cilantro if using.
  6. Fold in the sides of the tortilla, then tightly roll from the bottom up to create a sealed burrito.
  7. Serve immediately, optionally with a squeeze of fresh lime juice.
