Callaloo and Saltfish

Ingredients
- ½ lb salt cod
- 4 slice bacon
- 525 g callaloo
- 1 yellow onion
- 2 scallions
- 2 clove garlic
- 1 scotch bonnet pepper
- 2 plum tomatoes
- 2 sprig fresh thyme
- ¼ tsp black pepper
Steps
- Soak salt cod in water overnight, then boil it until foamy, drain, cool, and shred.
- Cook bacon in a skillet until crispy; remove bacon, reserving 1 tablespoon of grease.
- Add chopped yellow onion, scallions, scotch bonnet, and garlic to the skillet; cook for 2 minutes until softened.
- Stir in the shredded salt cod and cook for 1 minute.
- Add callaloo, plum tomatoes, fresh thyme, and black pepper; stir to combine and cook until heated through, about 2 minutes.
