Ingredients

  • ½ lb salt cod
  • 4 slice bacon
  • 525 g callaloo
  • 1 yellow onion
  • 2 scallions
  • 2 clove garlic
  • 1 scotch bonnet pepper
  • 2 plum tomatoes
  • 2 sprig fresh thyme
  • ¼ tsp black pepper

Steps

  1. Soak salt cod in water overnight, then boil it until foamy, drain, cool, and shred.
  2. Cook bacon in a skillet until crispy; remove bacon, reserving 1 tablespoon of grease.
  3. Add chopped yellow onion, scallions, scotch bonnet, and garlic to the skillet; cook for 2 minutes until softened.
  4. Stir in the shredded salt cod and cook for 1 minute.
  5. Add callaloo, plum tomatoes, fresh thyme, and black pepper; stir to combine and cook until heated through, about 2 minutes.
