Jamaican Cornmeal Porridge
A creamy and comforting Jamaican breakfast porridge made with fine yellow cornmeal, rich coconut milk, and warm spices, sweetened with condensed milk.
Ingredients
- 4 cup water
- 380 g coconut milk
- 1 cup fine yellow cornmeal
- 1½ tsp vanilla extract
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground allspice
- ½ cup sweetened condensed milk
Steps
- Combine 2.5 cups water and coconut milk in a heavy-bottomed pot and bring to a boil over medium-high heat.
- In a separate bowl, whisk together 1 cup cornmeal with the remaining 1.5 cups water until smooth.
- Once the pot boils, slowly whisk in the cornmeal mixture, ensuring no lumps, and continue whisking for about 1 minute.
- Reduce heat to low, cover the pot, and simmer for 15-20 minutes, stirring occasionally to prevent sticking.
- During the last 5 minutes of cooking, stir in the vanilla extract, cinnamon, nutmeg, and allspice.
- Remove from heat and stir in the sweetened condensed milk.
- Serve warm and enjoy.
