Jamaican Cornmeal Porridge

A creamy and comforting Jamaican breakfast porridge made with fine yellow cornmeal, rich coconut milk, and warm spices, sweetened with condensed milk.

Ingredients

  • 4 cup water
  • 380 g coconut milk
  • 1 cup fine yellow cornmeal
  • 1½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground allspice
  • ½ cup sweetened condensed milk

Steps

  1. Combine 2.5 cups water and coconut milk in a heavy-bottomed pot and bring to a boil over medium-high heat.
  2. In a separate bowl, whisk together 1 cup cornmeal with the remaining 1.5 cups water until smooth.
  3. Once the pot boils, slowly whisk in the cornmeal mixture, ensuring no lumps, and continue whisking for about 1 minute.
  4. Reduce heat to low, cover the pot, and simmer for 15-20 minutes, stirring occasionally to prevent sticking.
  5. During the last 5 minutes of cooking, stir in the vanilla extract, cinnamon, nutmeg, and allspice.
  6. Remove from heat and stir in the sweetened condensed milk.
  7. Serve warm and enjoy.
