Ingredients

  • 1½ lb Skirt steak
  • 2 Oranges
  • 2 Limes
  • 4 clove Garlic
  • ½ bunch Cilantro
  • ½ White onion
  • 1 Jalapeño (optional)
  • 2 tbsp Olive oil
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • ½ tsp Smoked paprika
  • 1½ tsp Salt
  • ½ tsp Black pepper
  • 8 Corn tortillas (optional)

Steps

  1. Juice oranges and limes. Mince garlic, finely chop cilantro, and thinly slice half a white onion. If using, mince jalapeño.
  2. In a shallow dish, combine orange juice, lime juice, minced garlic, half of the chopped cilantro, half of the sliced onion, olive oil, cumin, chili powder, smoked paprika, salt, pepper, and jalapeño (if using).
  3. Add the skirt steak to the marinade, ensuring it's fully coated. Marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator.
  4. Preheat your grill to high heat. Remove steak from marinade, discarding excess.
  5. Grill the skirt steak for 3-5 minutes per side for medium-rare, or until desired doneness is reached.
  6. Remove steak from grill and let rest for 5-10 minutes before thinly slicing against the grain.
  7. Serve immediately with remaining fresh cilantro and onion, and warm tortillas if desired.
