Carne Asada Burritos

Ingredients

  • 1½ lb skirt steak
  • ¼ cup lime juice
  • ¼ cup orange juice
  • ½ cup cilantro
  • 4 clove garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 flour tortillas
  • 2 cup cooked rice
  • 15 oz canned black beans
  • 2 avocado (optional)
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)

Steps

  1. In a bowl, whisk together lime juice, orange juice, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper. Add the skirt steak, ensuring it's fully coated. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Preheat a grill to medium-high heat. Remove steak from marinade and discard excess. Grill steak for 4-6 minutes per side for medium-rare, or until desired doneness.
  3. While the steak rests for 5 minutes, warm the flour tortillas. You can do this on the grill, in a microwave, or in a dry skillet.
  4. Slice the rested steak against the grain into thin strips.
  5. Drain and rinse the black beans. Mash the avocado, if using.
  6. Assemble burritos: Lay out each tortilla. Divide the cooked rice, black beans, sliced carne asada, and mashed avocado (if using) evenly among them. Add salsa and sour cream if desired.
  7. Fold in the sides of each tortilla, then roll tightly from the bottom to create a burrito.
