Cauliflower Fried Rice

Ingredients

  • 1 head cauliflower florets
  • 2 tbsp sesame oil
  • 4 clove garlic
  • 1 tbsp ginger
  • 1 cup carrots
  • 1 cup peas
  • 4 tbsp soy sauce
  • 2 eggs
  • ½ cup green onions (optional)

Steps

  1. Pulse cauliflower florets in a food processor until they resemble rice.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger; cook for 1 minute until fragrant.
  3. Add diced carrots and peas to the skillet, stir-fry for 3-4 minutes until slightly tender.
  4. Push vegetables to one side of the skillet. Crack eggs into the empty space and scramble until cooked through, then mix with the vegetables.
  5. Add the riced cauliflower to the skillet and stir-fry for 5-7 minutes, until tender-crisp.
  6. Stir in soy sauce and mix well. Cook for another 1-2 minutes.
  7. Garnish with chopped green onions if desired and serve immediately.
