Cauliflower Fried Rice
A healthy and flavorful take on classic fried rice, using cauliflower florets as a low-carb alternative to rice.
Ingredients
- 1 head cauliflower florets
- 2 tbsp sesame oil
- 4 clove garlic
- 1 tbsp ginger
- 1 cup carrots
- 1 cup peas
- 4 tbsp soy sauce
- 2 eggs
- ½ cup green onions (optional)
Steps
- Pulse cauliflower florets in a food processor until they resemble rice.
- Heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger; cook for 1 minute until fragrant.
- Add diced carrots and peas to the skillet, stir-fry for 3-4 minutes until slightly tender.
- Push vegetables to one side of the skillet. Crack eggs into the empty space and scramble until cooked through, then mix with the vegetables.
- Add the riced cauliflower to the skillet and stir-fry for 5-7 minutes, until tender-crisp.
- Stir in soy sauce and mix well. Cook for another 1-2 minutes.
- Garnish with chopped green onions if desired and serve immediately.
