Chicken Burritos

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • ¼ cup water
  • 4 flour tortillas (large)
  • 2 cups cooked white rice
  • 15 oz canned black beans, rinsed and drained
  • 1½ cups shredded cheddar cheese
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)
  • ¼ cup fresh cilantro, chopped (optional)

Steps

  1. Cut chicken breasts into small, bite-sized pieces. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken to the skillet and cook until browned, about 5-7 minutes. Stir in taco seasoning and water, reducing heat to medium-low and simmering for 5 minutes until chicken is cooked through and sauce thickens.
  3. Warm tortillas according to package instructions (microwave or stovetop).
  4. Assemble burritos: Lay out each warm tortilla. Spoon a portion of cooked rice, black beans, seasoned chicken, and shredded cheese onto the center of each tortilla.
  5. Fold in the sides of the tortilla, then tightly roll from the bottom up to form a burrito.
  6. Serve immediately with optional salsa, sour cream, and fresh cilantro.
