Chicken Burritos
Hearty and satisfying, these chicken burritos are packed with seasoned chicken, rice, beans, and cheese, all wrapped in a warm tortilla.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- ¼ cup water
- 4 flour tortillas (large)
- 2 cups cooked white rice
- 15 oz canned black beans, rinsed and drained
- 1½ cups shredded cheddar cheese
- ½ cup salsa (optional)
- ½ cup sour cream (optional)
- ¼ cup fresh cilantro, chopped (optional)
Steps
- Cut chicken breasts into small, bite-sized pieces. Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned, about 5-7 minutes. Stir in taco seasoning and water, reducing heat to medium-low and simmering for 5 minutes until chicken is cooked through and sauce thickens.
- Warm tortillas according to package instructions (microwave or stovetop).
- Assemble burritos: Lay out each warm tortilla. Spoon a portion of cooked rice, black beans, seasoned chicken, and shredded cheese onto the center of each tortilla.
- Fold in the sides of the tortilla, then tightly roll from the bottom up to form a burrito.
- Serve immediately with optional salsa, sour cream, and fresh cilantro.
