Chicken Congee
A comforting Chinese rice porridge, slow-cooked with tender marinated chicken and fragrant ginger, perfect for a soothing meal.
Ingredients
- ½ lb chicken breast
- ½ cup white rice
- 8 cup water
- 1 tsp ginger
- 1 tsp ginger, sliced
- 1 tbsp green onions
- ¼ tsp salt
- ¼ tsp white pepper
- 2 oz fresh cilantro (optional)
Steps
- Cut chicken into small pieces. In a bowl, marinate chicken with 1/4 tsp salt, 1/4 tsp white pepper, and 1 tsp ginger (cordial or finely grated). Set aside.
- Rinse rice thoroughly in a pot until water runs clear. Drain.
- Add 8 cups of water to the pot with the rinsed rice. Bring to a boil over high heat.
- Once boiling, reduce heat to low and simmer for 20-25 minutes, stirring every 8-10 minutes to prevent sticking. Add more water if a thinner consistency is desired.
- Add the marinated chicken to the congee and continue to simmer on low heat for another 10 minutes, until chicken is cooked through.
- Stir in the sliced ginger and green onions. Cook for 10 seconds.
- Serve hot. Garnish with fresh cilantro if desired.
