Chicken Congee

A comforting Chinese rice porridge, slow-cooked with tender marinated chicken and fragrant ginger, perfect for a soothing meal.

Ingredients

  • ½ lb chicken breast
  • ½ cup white rice
  • 8 cup water
  • 1 tsp ginger
  • 1 tsp ginger, sliced
  • 1 tbsp green onions
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 2 oz fresh cilantro (optional)

Steps

  1. Cut chicken into small pieces. In a bowl, marinate chicken with 1/4 tsp salt, 1/4 tsp white pepper, and 1 tsp ginger (cordial or finely grated). Set aside.
  2. Rinse rice thoroughly in a pot until water runs clear. Drain.
  3. Add 8 cups of water to the pot with the rinsed rice. Bring to a boil over high heat.
  4. Once boiling, reduce heat to low and simmer for 20-25 minutes, stirring every 8-10 minutes to prevent sticking. Add more water if a thinner consistency is desired.
  5. Add the marinated chicken to the congee and continue to simmer on low heat for another 10 minutes, until chicken is cooked through.
  6. Stir in the sliced ginger and green onions. Cook for 10 seconds.
  7. Serve hot. Garnish with fresh cilantro if desired.
