Chicken Fajita Mac and Cheese
This comforting dish combines the smoky, spiced flavors of chicken fajitas with creamy, cheesy macaroni for a satisfying meal.
Ingredients
- 1 lb macaroni
- 2 cup chicken broth
- ½ cup heavy cream
- 1 packet fajita seasoning
- 1 tsp salt
- 3 breast chicken breast
- 2 tbsp olive oil
- 1 small onion
- 2 red pepper
- 2 clove garlic
- 1 cup cheddar cheese
- ¼ cup fresh parsley (optional)
Steps
- Dice chicken breast. Finely dice onion and red peppers, and mince garlic.
- Heat olive oil in a large pot or skillet over medium heat. Add onion, red peppers, and garlic, and cook until translucent.
- Create a well in the vegetables, add diced chicken, fajita seasoning, and salt. Cook until chicken is lightly browned.
- Stir in heavy cream, chicken broth, and macaroni. Bring to a simmer, then reduce heat to low, cover, and cook for 20 minutes, or until pasta is tender.
- Remove from heat and stir in cheddar cheese until melted and well combined.
- Serve hot, garnished with chopped fresh parsley if desired.
