  • 1 lb macaroni
  • 2 cup chicken broth
  • ½ cup heavy cream
  • 1 packet fajita seasoning
  • 1 tsp salt
  • 3 breast chicken breast
  • 2 tbsp olive oil
  • 1 small onion
  • 2 red pepper
  • 2 clove garlic
  • 1 cup cheddar cheese
  • ¼ cup fresh parsley (optional)

Steps

  1. Dice chicken breast. Finely dice onion and red peppers, and mince garlic.
  2. Heat olive oil in a large pot or skillet over medium heat. Add onion, red peppers, and garlic, and cook until translucent.
  3. Create a well in the vegetables, add diced chicken, fajita seasoning, and salt. Cook until chicken is lightly browned.
  4. Stir in heavy cream, chicken broth, and macaroni. Bring to a simmer, then reduce heat to low, cover, and cook for 20 minutes, or until pasta is tender.
  5. Remove from heat and stir in cheddar cheese until melted and well combined.
  6. Serve hot, garnished with chopped fresh parsley if desired.
