Vegan Chocolate Cake

Ingredients

  • 1¼ cup self-rising flour
  • ½ cup coconut sugar
  • ⅓ cup raw cacao powder
  • 1 tsp baking powder
  • 2 flax eggs
  • ½ cup almond milk
  • 1 tsp vanilla extract
  • ½ cup boiling water
  • 2 oz vegan chocolate (optional)

Steps

  1. Preheat your oven to 350°F (180°C). Grease and flour a small cake pan.
  2. In a large bowl, combine the self-rising flour, coconut sugar, raw cacao powder, and baking powder.
  3. In a separate bowl, whisk together the flax eggs, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Carefully stir in the boiling water until the batter is smooth.
  6. Pour the batter into the prepared cake pan and bake for 45 minutes, or until a skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for a few minutes before transferring to a wire rack to cool completely.
  8. Optionally, melt vegan chocolate and drizzle over the cooled cake before serving.
