  • 2½ lb chicken, cut into 8 pieces
  • 2 qt neutral frying oil
  • 1 egg white
  • 1½ cup all-purpose flour
  • 1 tbsp brown sugar
  • 1 tbsp salt
  • 1 tbsp paprika
  • 2 tsp onion salt
  • 1 tsp chili powder
  • 1 tsp black pepper
  • ½ tsp celery salt
  • ½ tsp sage
  • ½ tsp garlic powder
  • ½ tsp allspice
  • ½ tsp oregano
  • ½ tsp basil
  • ½ tsp marjoram

Steps

  1. In a large bowl, thoroughly mix all spices, flour, brown sugar, and salt.
  2. Dip each chicken piece into the egg white to lightly coat, then transfer to the flour mixture. Turn and press firmly to ensure the flour mixture adheres well.
  3. Place coated chicken pieces on a wire rack and let rest for 5 minutes to allow the crust to set.
  4. Preheat frying oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C).
  5. Carefully fry chicken in batches, ensuring not to overcrowd the fryer. Breasts and wings will take 12-14 minutes; legs and thighs will need a few minutes longer.
  6. Chicken is done when an internal thermometer reads 165°F (74°C) in the thickest part.
  7. Remove chicken from oil and drain on paper towels or a wire rack set over a baking sheet.
