Ingredients
- 2½ lb chicken, cut into 8 pieces
- 2 qt neutral frying oil
- 1 egg white
- 1½ cup all-purpose flour
- 1 tbsp brown sugar
- 1 tbsp salt
- 1 tbsp paprika
- 2 tsp onion salt
- 1 tsp chili powder
- 1 tsp black pepper
- ½ tsp celery salt
- ½ tsp sage
- ½ tsp garlic powder
- ½ tsp allspice
- ½ tsp oregano
- ½ tsp basil
- ½ tsp marjoram
Steps
- In a large bowl, thoroughly mix all spices, flour, brown sugar, and salt.
- Dip each chicken piece into the egg white to lightly coat, then transfer to the flour mixture. Turn and press firmly to ensure the flour mixture adheres well.
- Place coated chicken pieces on a wire rack and let rest for 5 minutes to allow the crust to set.
- Preheat frying oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C).
- Carefully fry chicken in batches, ensuring not to overcrowd the fryer. Breasts and wings will take 12-14 minutes; legs and thighs will need a few minutes longer.
- Chicken is done when an internal thermometer reads 165°F (74°C) in the thickest part.
- Remove chicken from oil and drain on paper towels or a wire rack set over a baking sheet.
