Chicken Fajitas

Ingredients

  • 1½ lb chicken breast
  • 3 bell peppers
  • 1 onion
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 lime (optional)
  • 8 flour tortillas (optional)
  • ½ cup salsa (optional)
  • ½ cup sour cream (optional)

Steps

  1. Slice chicken breasts, bell peppers, and onion into thin strips.
  2. In a small bowl, combine chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper to make the fajita seasoning.
  3. Toss chicken strips with half of the seasoning and 1 tablespoon of olive oil.
  4. Heat remaining olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet.
  5. Add bell pepper and onion strips to the same skillet. Cook, stirring occasionally, until tender-crisp, about 5-7 minutes.
  6. Return chicken to the skillet with the vegetables. Add remaining fajita seasoning and toss to combine, cooking for another 1-2 minutes.
  7. Serve hot with warm tortillas, a squeeze of fresh lime juice, salsa, and sour cream, if desired.
