French Lentils With Garlic and Thyme

Ingredients

  • 3 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • 2 stalks celery
  • 2¼ cups French lentils
  • 1 tsp thyme
  • 3 bay leaf
  • 1 tbsp salt
  • 6 cups water
  • 0 cups chicken broth (optional)

Steps

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add chopped onion, garlic, carrot, and celery to the pan and sauté until softened, 5 to 10 minutes.
  3. Stir in water (or chicken broth and water), lentils, thyme, bay leaves, and salt.
  4. Bring the mixture to a boil, then reduce the heat to a fast simmer.
  5. Simmer the lentils for 20 to 25 minutes, or until they are tender and have absorbed most of the liquid.
  6. If necessary, drain any excess water after cooking.
  7. Serve immediately or allow to cool for later reheating.
