French Lentils With Garlic and Thyme
A hearty and aromatic French lentil dish, simmered with tender vegetables, garlic, and thyme until perfectly tender.
Ingredients
- 3 tbsp olive oil
- 1 onion
- 2 cloves garlic
- 1 carrot
- 2 stalks celery
- 2¼ cups French lentils
- 1 tsp thyme
- 3 bay leaf
- 1 tbsp salt
- 6 cups water
- 0 cups chicken broth (optional)
Steps
- Heat olive oil in a large saucepan over medium heat.
- Add chopped onion, garlic, carrot, and celery to the pan and sauté until softened, 5 to 10 minutes.
- Stir in water (or chicken broth and water), lentils, thyme, bay leaves, and salt.
- Bring the mixture to a boil, then reduce the heat to a fast simmer.
- Simmer the lentils for 20 to 25 minutes, or until they are tender and have absorbed most of the liquid.
- If necessary, drain any excess water after cooking.
- Serve immediately or allow to cool for later reheating.
