French Onion Soup
A classic French soup featuring deeply caramelized onions in a rich beef broth, topped with toasted bread and melted Gruyère cheese.
Ingredients
- 50 g butter
- 1 tbs olive oil
- 1 kg onion
- 1 tsp sugar
- 4 clove garlic
- 2 tbs all-purpose flour
- 250 ml dry white wine
- 1 L beef broth
- 4 slice crusty bread
- 140 g Gruyère cheese
Steps
- Melt butter and olive oil in a large heavy-based pot over medium heat. Add sliced onions and cook, covered, for 10 minutes until softened.
- Uncover, sprinkle in sugar, and continue to cook for 20-30 minutes, stirring frequently, until onions are deeply caramelized and golden brown. Add minced garlic during the last few minutes of cooking.
- Sprinkle flour over the caramelized onions and stir well. Gradually whisk in the dry white wine, then slowly add the hot beef broth.
- Bring the soup to a simmer, then cover and cook for 15-20 minutes to allow flavors to meld.
- Preheat your oven broiler. Ladle the hot soup into oven-safe bowls.
- Place one or two slices of toasted bread on top of each bowl of soup, then generously cover with shredded Gruyère cheese.
- Broil for 2-4 minutes, or until the cheese is melted and bubbly and golden brown. Serve immediately.
