Chicken Parmesan Pasta Bake

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 12 oz penne pasta
  • 24 oz marinara sauce
  • 2 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped (optional)

Steps

  1. Preheat oven to 3750F (1900C).
  2. Cut chicken breasts into 1-inch pieces. Toss chicken with 1 tablespoon olive oil, garlic powder, onion powder, oregano, salt, and pepper.
  3. Cook penne pasta according to package directions until al dente. Drain well.
  4. Heat remaining 1 tablespoon olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken and cook until browned and mostly cooked through, about 5-7 minutes.
  5. Stir in marinara sauce and cooked pasta with the chicken. Mix well to combine.
  6. Sprinkle mozzarella cheese and Parmesan cheese evenly over the pasta mixture.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly and the sauce is heated through. If desired, broil for the last 2-3 minutes for a golden-brown crust.
  8. Garnish with fresh parsley, if using, and serve hot.
