Chicken Quesadillas
These cheesy chicken quesadillas are a quick and satisfying meal, perfect for a weeknight dinner or a fun lunch.
Ingredients
- 2 cup cooked chicken
- 1½ cup shredded Monterey Jack cheese
- 8 flour tortillas
- 2 tbsp butter
- ½ cup salsa (optional)
- ½ cup sour cream (optional)
- 1 avocado (optional)
Steps
- Shred or dice the cooked chicken.
- Sprinkle half a tortilla with a quarter of the cheese, then a quarter of the chicken, and another quarter of the cheese.
- Fold the tortilla in half to create a crescent shape.
- Melt 1/2 tablespoon of butter in a large skillet over medium heat. Place a quesadilla in the skillet and cook for 3-4 minutes per side, or until golden brown and the cheese is melted.
- Repeat with the remaining tortillas, chicken, and cheese, adding more butter as needed.
- Slice each quesadilla into wedges and serve immediately with salsa, sour cream, or avocado if desired.
