Chicken Shawarma

Ingredients

  • 1½ lb chicken thighs
  • 1 tbsp cilantro
  • 1½ tbsp cumin
  • 1 tbsp cardamom
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 2½ tbsp lemon juice
  • 1½ tbsp olive oil
  • ½ cup Greek yogurt
  • ½ clove garlic
  • ½ head lettuce (optional)
  • 1 tomato (optional)
  • 6 pita bread

Steps

  1. Combine cilantro, 1 tbsp cumin, cardamom, cayenne, paprika, 2 tbsp lemon juice, and olive oil in a bag or bowl. Add chicken thighs, coat thoroughly, and marinate for at least 4 hours or overnight.
  2. For the yogurt sauce, combine Greek yogurt, minced garlic, 0.5 tsp cumin, and 0.5 tbsp lemon juice. Mix well and refrigerate until serving.
  3. Preheat a grill or heavy-based pan over medium-high heat.
  4. Grill chicken for 4-5 minutes per side, or until nicely charred and cooked through.
  5. Remove chicken from heat, cover loosely with foil, and let rest for 5 minutes.
  6. Slice the chicken into thin strips.
  7. Warm pita bread. Spread yogurt sauce on pita, then add sliced lettuce, tomato, and chicken shawarma. Roll up and serve immediately.
