A vibrant and flavorful Egyptian shakshuka featuring poached eggs in a rich tomato sauce, perfect for a comforting meal.

Ingredients

  • 1 tbs olive oil
  • 2 red onion
  • 1 red chili
  • 1 clove garlic
  • ½ bunch fresh cilantro
  • 800 g cherry tomatoes
  • 1 tbs granulated sugar
  • 4 eggs
  • ¼ cup feta cheese (optional)
  • 4 slices crusty bread (optional)

Steps

  1. Heat olive oil in a lidded frying pan over medium heat.
  2. Add chopped red onions, red chili, garlic, and cilantro stalks to the pan and soften for 5 minutes.
  3. Stir in the cherry tomatoes and granulated sugar, then simmer for 8-10 minutes until the sauce thickens.
  4. Make 4 indentations in the sauce with the back of a spoon and crack an egg into each.
  5. Cover the pan with a lid and cook over low heat for 6-8 minutes, or until eggs are cooked to your preference.
  6. Garnish with fresh cilantro leaves and crumbled feta, if using. Serve immediately with crusty bread.
