Shakshuka
A vibrant and flavorful Egyptian shakshuka featuring poached eggs in a rich tomato sauce, perfect for a comforting meal.
Ingredients
- 1 tbs olive oil
- 2 red onion
- 1 red chili
- 1 clove garlic
- ½ bunch fresh cilantro
- 800 g cherry tomatoes
- 1 tbs granulated sugar
- 4 eggs
- ¼ cup feta cheese (optional)
- 4 slices crusty bread (optional)
Steps
- Heat olive oil in a lidded frying pan over medium heat.
- Add chopped red onions, red chili, garlic, and cilantro stalks to the pan and soften for 5 minutes.
- Stir in the cherry tomatoes and granulated sugar, then simmer for 8-10 minutes until the sauce thickens.
- Make 4 indentations in the sauce with the back of a spoon and crack an egg into each.
- Cover the pan with a lid and cook over low heat for 6-8 minutes, or until eggs are cooked to your preference.
- Garnish with fresh cilantro leaves and crumbled feta, if using. Serve immediately with crusty bread.
