Tamiya (Egyptian Falafel)
Crispy and flavorful Egyptian falafel made from broad beans, herbs, and spices, perfect in pita or as part of a meze.
Ingredients
- 3 cup broad beans
- 6 green onions
- 4 clove garlic
- ¼ cup parsley
- 2 tsp cumin
- 1 tsp baking powder
- ½ tsp cayenne pepper
- ¼ cup flour (optional)
- 4 cup vegetable oil
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Soak broad beans overnight, then drain, peel if necessary, and pat dry.
- Grind beans with green onions, garlic, parsley, cumin, baking powder, cayenne pepper, salt, and black pepper to form a coarse paste. Refrigerate for 30 minutes.
- Shape the bean mixture into 1-inch balls, flatten slightly, and lightly coat with flour if desired.
- Heat vegetable oil in a deep pan to 365°F (185°C).
- Fry patties in batches for about 5 minutes, turning once, until golden brown.
- Remove with a slotted spoon and serve hot.
