Tamiya (Egyptian Falafel)

Crispy and flavorful Egyptian falafel made from broad beans, herbs, and spices, perfect in pita or as part of a meze.

Ingredients

  • 3 cup broad beans
  • 6 green onions
  • 4 clove garlic
  • ¼ cup parsley
  • 2 tsp cumin
  • 1 tsp baking powder
  • ½ tsp cayenne pepper
  • ¼ cup flour (optional)
  • 4 cup vegetable oil
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Soak broad beans overnight, then drain, peel if necessary, and pat dry.
  2. Grind beans with green onions, garlic, parsley, cumin, baking powder, cayenne pepper, salt, and black pepper to form a coarse paste. Refrigerate for 30 minutes.
  3. Shape the bean mixture into 1-inch balls, flatten slightly, and lightly coat with flour if desired.
  4. Heat vegetable oil in a deep pan to 365°F (185°C).
  5. Fry patties in batches for about 5 minutes, turning once, until golden brown.
  6. Remove with a slotted spoon and serve hot.
