Chicken Shish Kebabs
Juicy marinated chicken and colorful vegetables grilled to perfection on skewers, offering a delightful and healthy meal.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 3 bell peppers (red, green, yellow)
- 1 red onion
- 1 pint cherry tomatoes
- ¼ cup olive oil
- 2 tbsp lemon juice
- 3 clove garlic, minced
- 1 tsp dried oregano
- ½ tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- 8 wooden or metal skewers (optional)
Steps
- Cut chicken breasts into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken cubes and toss to coat. Marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator.
- While chicken marinates, cut bell peppers and red onion into 1-inch pieces. Thread the chicken, bell peppers, red onion, and cherry tomatoes alternately onto the skewers.
- Preheat your grill to medium-high heat. Lightly oil the grill grates.
- Place the skewers on the hot grill. Cook for 8-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp and slightly charred.
- Remove from grill and let rest for a few minutes before serving.
