Greek Lemon Herb Chicken
Tender chicken marinated in a bright lemon-herb mixture and roasted to perfection, embodying the fresh flavors of the Mediterranean.
Ingredients
- 1½ lb boneless, skinless chicken thighs
- 2 lemon
- 2 tbsp fresh oregano
- 1 tbsp fresh thyme
- 4 clove garlic
- ¼ cup olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ red onion (optional)
- 1 cup cherry tomatoes (optional)
Steps
- Pat chicken thighs dry and place in a large bowl.
- Zest one lemon, then juice both lemons. Mince garlic. Chop fresh oregano and thyme. Combine lemon zest, lemon juice, minced garlic, chopped herbs, olive oil, salt, and pepper in a small bowl to make the marinade.
- Pour the marinade over the chicken thighs, ensuring they are well coated. Marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator.
- Preheat oven to 400 00B0F (200 00B0C). Arrange chicken thighs on a baking sheet. If using, add sliced red onion and cherry tomatoes around the chicken.
- Roast for 25-30 minutes, or until chicken is cooked through and lightly golden, reaching an internal temperature of 165 00B0F (74 00B0C).
- Let the chicken rest for 5 minutes before serving.
