Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 2 lemon
  • 2 tbsp fresh oregano
  • 1 tbsp fresh thyme
  • 4 clove garlic
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ red onion (optional)
  • 1 cup cherry tomatoes (optional)

Steps

  1. Pat chicken thighs dry and place in a large bowl.
  2. Zest one lemon, then juice both lemons. Mince garlic. Chop fresh oregano and thyme. Combine lemon zest, lemon juice, minced garlic, chopped herbs, olive oil, salt, and pepper in a small bowl to make the marinade.
  3. Pour the marinade over the chicken thighs, ensuring they are well coated. Marinate for at least 20 minutes at room temperature, or up to 2 hours in the refrigerator.
  4. Preheat oven to 400 00B0F (200 00B0C). Arrange chicken thighs on a baking sheet. If using, add sliced red onion and cherry tomatoes around the chicken.
  5. Roast for 25-30 minutes, or until chicken is cooked through and lightly golden, reaching an internal temperature of 165 00B0F (74 00B0C).
  6. Let the chicken rest for 5 minutes before serving.
