Chorizo and Shrimp Skillet
A flavorful and quick one-pan meal featuring spicy chorizo and succulent shrimp cooked with bell peppers and onions.
Ingredients
- ¾ lb chorizo sausage
- 1 lb large shrimp
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow onion
- 3 clove garlic
- 14½ oz diced tomatoes
- ½ cup chicken broth
- 1 tsp smoked paprika
- ½ tsp oregano
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Slice chorizo into rounds. Dice bell peppers and onion. Mince garlic. Peel and devein shrimp.
- Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo with a slotted spoon and set aside, leaving rendered fat in the skillet.
- Add bell peppers and onion to the skillet and cook until softened, about 5-7 minutes. Add minced garlic, smoked paprika, and oregano, cooking for 1 minute more until fragrant.
- Stir in diced tomatoes and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Add the shrimp to the skillet, season with salt and pepper, and cook for 3-5 minutes, or until pink and cooked through. Stir the cooked chorizo back into the skillet.
- Serve immediately, garnished with fresh parsley if desired.
