Chorizo and Shrimp Skillet

Ingredients

  • ¾ lb chorizo sausage
  • 1 lb large shrimp
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow onion
  • 3 clove garlic
  • 14½ oz diced tomatoes
  • ½ cup chicken broth
  • 1 tsp smoked paprika
  • ½ tsp oregano
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley (optional)

Steps

  1. Slice chorizo into rounds. Dice bell peppers and onion. Mince garlic. Peel and devein shrimp.
  2. Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo with a slotted spoon and set aside, leaving rendered fat in the skillet.
  3. Add bell peppers and onion to the skillet and cook until softened, about 5-7 minutes. Add minced garlic, smoked paprika, and oregano, cooking for 1 minute more until fragrant.
  4. Stir in diced tomatoes and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Add the shrimp to the skillet, season with salt and pepper, and cook for 3-5 minutes, or until pink and cooked through. Stir the cooked chorizo back into the skillet.
  6. Serve immediately, garnished with fresh parsley if desired.
