Chorizo & Tomato Salad

Ingredients
- 3 beef tomatoes
- ½ red onion
- 4 sprigs fresh thyme
- 1 tbsp sherry vinegar
- 2 tbsp extra virgin olive oil
- 0.2 lb chorizo
- ½ tsp salt (optional)
- ¼ tsp black pepper (optional)
Steps
- Slice the beef tomatoes and thinly slice the red onion. Place them in a bowl with fresh thyme sprigs.
