Classic Chicken Tacos

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • ½ medium yellow onion
  • 2 clove garlic
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp paprika
  • ½ tsp oregano
  • ¾ tsp salt
  • ¼ tsp black pepper
  • ½ cup chicken broth
  • 12 corn tortillas
  • 1 lime (optional)
  • 2 cup shredded lettuce (optional)
  • 1 cup diced tomatoes (optional)
  • 1 cup shredded cheddar cheese (optional)
  • ½ cup sour cream (optional)
  • ½ cup salsa (optional)

Steps

  1. Dice the onion and mince the garlic. Cut chicken breasts into 1-inch cubes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. Add onion to the skillet and cook until softened, about 3-4 minutes. Stir in garlic, chili powder, cumin, paprika, oregano, salt, and pepper; cook for 1 minute until fragrant.
  4. Return chicken to the skillet. Pour in chicken broth, bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until chicken is cooked through and easily shredded.
  5. Shred the chicken directly in the skillet using two forks, mixing it with the seasoned liquid.
  6. Warm tortillas according to package directions (microwave, oven, or skillet).
  7. Serve chicken in warm tortillas with desired toppings such as shredded lettuce, diced tomatoes, cheese, sour cream, salsa, and a squeeze of fresh lime juice.
