Classic Chicken Tacos

Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 tbsp olive oil
- ½ medium yellow onion
- 2 clove garlic
- 1 tbsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- ½ tsp oregano
- ¾ tsp salt
- ¼ tsp black pepper
- ½ cup chicken broth
- 12 corn tortillas
- 1 lime (optional)
- 2 cup shredded lettuce (optional)
- 1 cup diced tomatoes (optional)
- 1 cup shredded cheddar cheese (optional)
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
Steps
- Dice the onion and mince the garlic. Cut chicken breasts into 1-inch cubes.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- Add onion to the skillet and cook until softened, about 3-4 minutes. Stir in garlic, chili powder, cumin, paprika, oregano, salt, and pepper; cook for 1 minute until fragrant.
- Return chicken to the skillet. Pour in chicken broth, bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until chicken is cooked through and easily shredded.
- Shred the chicken directly in the skillet using two forks, mixing it with the seasoned liquid.
- Warm tortillas according to package directions (microwave, oven, or skillet).
- Serve chicken in warm tortillas with desired toppings such as shredded lettuce, diced tomatoes, cheese, sour cream, salsa, and a squeeze of fresh lime juice.
