Cod Tacos
Flaky pan-fried cod nestled in warm tortillas with crisp cabbage and a zesty lime crema makes for a refreshing and satisfying taco night.
Ingredients
- 1½ lb cod fillets
- 12 corn tortillas
- ½ head red cabbage
- 2 lime
- ½ bunch cilantro (optional)
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
Steps
- Prepare the lime crema: In a small bowl, whisk together sour cream, mayonnaise, juice from 1 lime, and a pinch of salt. Set aside.
- Slice the red cabbage thinly and chop the cilantro. Set aside.
- Pat cod fillets dry and cut into 1-inch wide strips. In a medium bowl, toss cod with chili powder, cumin, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add cod strips and cook for 3-4 minutes per side, or until flaky and cooked through.
- Warm tortillas according to package directions (microwave, dry skillet, or oven).
- Assemble tacos: Fill each warm tortilla with cooked cod, shredded cabbage, a drizzle of lime crema, and a sprinkle of fresh cilantro. Serve immediately with extra lime wedges.
