Creamy Tuscan Chicken

This rich and flavorful dish features pan-seared chicken breasts simmered in a sun-dried tomato and spinach cream sauce.

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 clove garlic
  • ½ cup sun-dried tomatoes (packed in oil), drained and sliced
  • 1½ cup heavy cream
  • ½ cup chicken broth
  • 5 oz fresh spinach
  • ½ cup Parmesan cheese, grated
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Steps

  1. Pat chicken breasts dry and season generously with salt and pepper. Slice each breast in half horizontally to create thinner cutlets.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic and sliced sun-dried tomatoes to the skillet. Sauté for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, stirring occasionally, until the sauce slightly thickens.
  5. Stir in fresh spinach, allowing it to wilt into the sauce for 2-3 minutes. Add grated Parmesan cheese and red pepper flakes (if using), stirring until cheese is melted and sauce is smooth.
  6. Return the cooked chicken to the skillet, nestling it into the creamy Tuscan sauce. Simmer for another 2-3 minutes to heat through.
  7. Serve immediately, garnished with extra Parmesan if desired.
