Creamy Tuscan Chicken
This rich and flavorful dish features pan-seared chicken breasts simmered in a sun-dried tomato and spinach cream sauce.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 4 clove garlic
- ½ cup sun-dried tomatoes (packed in oil), drained and sliced
- 1½ cup heavy cream
- ½ cup chicken broth
- 5 oz fresh spinach
- ½ cup Parmesan cheese, grated
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)
Steps
- Pat chicken breasts dry and season generously with salt and pepper. Slice each breast in half horizontally to create thinner cutlets.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic and sliced sun-dried tomatoes to the skillet. Sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, stirring occasionally, until the sauce slightly thickens.
- Stir in fresh spinach, allowing it to wilt into the sauce for 2-3 minutes. Add grated Parmesan cheese and red pepper flakes (if using), stirring until cheese is melted and sauce is smooth.
- Return the cooked chicken to the skillet, nestling it into the creamy Tuscan sauce. Simmer for another 2-3 minutes to heat through.
- Serve immediately, garnished with extra Parmesan if desired.
