Creamy Tuscan Salmon
Flaky salmon fillets are pan-seared and then simmered in a rich, creamy sauce with sun-dried tomatoes, spinach, and garlic.
Ingredients
- 1½ lb salmon fillets
- 2 tbsp olive oil
- 4 clove garlic
- ½ cup sun-dried tomatoes in oil
- 1½ cup heavy cream
- ½ cup chicken broth
- 5 oz fresh spinach
- ¼ cup Parmesan cheese
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley (optional)
Steps
- Pat salmon fillets dry and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until cooked through. Remove salmon from the skillet and set aside.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, bring to a simmer, and cook for 3-5 minutes until the sauce slightly thickens.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes.
- Remove skillet from heat, stir in grated Parmesan cheese until melted and smooth.
- Return salmon fillets to the skillet, spooning the creamy Tuscan sauce over them. Garnish with fresh parsley if desired and serve immediately.
