Cucumber & Fennel Salad
A refreshing Polish salad featuring crisp cucumber and aromatic fennel, dressed in a tangy sour cream and dill dressing.
Ingredients
- 2 cucumber
- 1 fennel bulb
- ¾ cup sour cream
- 1 lemon
- 1 tbsp white wine vinegar
- ¼ cup fresh dill
- 1 tsp salt
- 1 tsp sugar
- ¼ tsp black pepper (optional)
Steps
- Thinly slice the cucumber and place it in a sieve. Sprinkle with salt and sugar, then let it sit for 10 minutes to drain excess water.
- While the cucumber drains, thinly slice the fennel bulb.
- In a medium bowl, whisk together the sour cream, fresh lemon juice, and white wine vinegar.
- Finely chop the fresh dill and stir it into the dressing. Season with black pepper to taste.
- Add the drained cucumber and sliced fennel to the dressing, tossing gently to combine.
- Serve immediately or chill for a short period to allow flavors to meld.
