Cucumber & Fennel Salad

Ingredients

  • 2 cucumber
  • 1 fennel bulb
  • ¾ cup sour cream
  • 1 lemon
  • 1 tbsp white wine vinegar
  • ¼ cup fresh dill
  • 1 tsp salt
  • 1 tsp sugar
  • ¼ tsp black pepper (optional)

Steps

  1. Thinly slice the cucumber and place it in a sieve. Sprinkle with salt and sugar, then let it sit for 10 minutes to drain excess water.
  2. While the cucumber drains, thinly slice the fennel bulb.
  3. In a medium bowl, whisk together the sour cream, fresh lemon juice, and white wine vinegar.
  4. Finely chop the fresh dill and stir it into the dressing. Season with black pepper to taste.
  5. Add the drained cucumber and sliced fennel to the dressing, tossing gently to combine.
  6. Serve immediately or chill for a short period to allow flavors to meld.
