Curry Noodles with Chicken
A comforting and flavorful dish featuring tender chicken and noodles coated in a rich, aromatic curry sauce.
Ingredients
- 1¼ lb boneless, skinless chicken breast
- 12 oz ramen noodles
- 13½ oz coconut milk
- 3 tbsp yellow curry paste
- 2 cup chicken broth
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 3 clove garlic
- 1 tbsp fresh ginger
- 1 lime (optional)
- ¼ cup cilantro (optional)
- 1 tbsp vegetable oil
Steps
- Cut chicken breast into 1-inch pieces. Mince garlic and grate fresh ginger.
- Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.
- Add curry paste to the pot and cook for 1 minute until fragrant. Stir in minced garlic and grated ginger and cook for another minute.
- Pour in chicken broth, coconut milk, soy sauce, and brown sugar. Bring the mixture to a simmer.
- Add ramen noodles to the pot, breaking them if necessary. Cook according to package directions, usually 3-5 minutes, until tender.
- Return the cooked chicken to the pot and stir to combine. Heat through for 1-2 minutes.
- Serve immediately, garnished with fresh cilantro and a squeeze of lime juice if desired.
