Curry Noodles with Chicken

Ingredients

  • 1¼ lb boneless, skinless chicken breast
  • 12 oz ramen noodles
  • 13½ oz coconut milk
  • 3 tbsp yellow curry paste
  • 2 cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 clove garlic
  • 1 tbsp fresh ginger
  • 1 lime (optional)
  • ¼ cup cilantro (optional)
  • 1 tbsp vegetable oil

Steps

  1. Cut chicken breast into 1-inch pieces. Mince garlic and grate fresh ginger.
  2. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until lightly browned, about 5-7 minutes. Remove chicken and set aside.
  3. Add curry paste to the pot and cook for 1 minute until fragrant. Stir in minced garlic and grated ginger and cook for another minute.
  4. Pour in chicken broth, coconut milk, soy sauce, and brown sugar. Bring the mixture to a simmer.
  5. Add ramen noodles to the pot, breaking them if necessary. Cook according to package directions, usually 3-5 minutes, until tender.
  6. Return the cooked chicken to the pot and stir to combine. Heat through for 1-2 minutes.
  7. Serve immediately, garnished with fresh cilantro and a squeeze of lime juice if desired.
