Easy Spanish Chicken

Ingredients

  • 8 chicken thighs
  • 2 tbsp extra virgin olive oil
  • 1 onion
  • 150 g chorizo
  • 1 red pepper
  • 1 yellow pepper
  • 1 tsp sweet smoked paprika
  • 4 clove garlic
  • 400 g tinned diced tomatoes
  • 150 g green olives
  • 400 g butter beans
  • ¼ cup fresh parsley (optional)
  • 1 pinch salt
  • 1 pinch black pepper

Steps

  1. Preheat oven to 200C (180C fan/Gas 6).
  2. Heat olive oil in a large ovenproof frying pan over medium heat. Add onion, chorizo, and peppers with a pinch of salt and pepper; cook for 15 minutes until vegetables soften and chorizo releases its oils.
  3. Stir in paprika and garlic; cook for another 2-3 minutes until fragrant.
  4. Add diced tomatoes, green olives, and butter beans to the pan; stir to combine and season with salt and pepper.
  5. Nestle the chicken thighs into the mixture, seasoning them well.
  6. Transfer the pan to the preheated oven and bake for 40 minutes, or until chicken skin is crisp and meat is cooked through and tender.
  7. Garnish with fresh parsley before serving.
