Easy Spanish Chicken
This rustic Spanish chicken dish features tender chicken thighs baked with chorizo, peppers, tomatoes, olives, and butter beans, creating a flavorful and satisfying meal.
Ingredients
- 8 chicken thighs
- 2 tbsp extra virgin olive oil
- 1 onion
- 150 g chorizo
- 1 red pepper
- 1 yellow pepper
- 1 tsp sweet smoked paprika
- 4 clove garlic
- 400 g tinned diced tomatoes
- 150 g green olives
- 400 g butter beans
- ¼ cup fresh parsley (optional)
- 1 pinch salt
- 1 pinch black pepper
Steps
- Preheat oven to 200C (180C fan/Gas 6).
- Heat olive oil in a large ovenproof frying pan over medium heat. Add onion, chorizo, and peppers with a pinch of salt and pepper; cook for 15 minutes until vegetables soften and chorizo releases its oils.
- Stir in paprika and garlic; cook for another 2-3 minutes until fragrant.
- Add diced tomatoes, green olives, and butter beans to the pan; stir to combine and season with salt and pepper.
- Nestle the chicken thighs into the mixture, seasoning them well.
- Transfer the pan to the preheated oven and bake for 40 minutes, or until chicken skin is crisp and meat is cooked through and tender.
- Garnish with fresh parsley before serving.
