Ingredients

  • 12 oz edamame, shelled
  • 12 oz ramen noodles
  • 2 carrots
  • 1 cucumber
  • 1 red bell pepper
  • 3 scallions
  • ¼ cup soy sauce
  • 3 tbsp rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 2 clove garlic, minced
  • 1 tbsp honey or maple syrup (optional)
  • 1 tbsp sesame seeds (optional)

Steps

  1. Cook ramen noodles according to package directions. Drain and rinse with cold water to prevent sticking, then set aside.
  2. While noodles cook, prepare the vegetables: julienne the carrots, cucumber, and red bell pepper. Thinly slice the scallions.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and optional honey or maple syrup to create the dressing.
  4. In a large bowl, combine the cooked noodles, shelled edamame, julienned carrots, cucumber, red bell pepper, and most of the sliced scallions.
  5. Pour the dressing over the noodle mixture and toss gently to ensure all ingredients are well coated.
  6. Divide the edamame noodle bowl among four serving bowls. Garnish with remaining sliced scallions and optional sesame seeds before serving.
