Edamame Noodle Bowl
A refreshing and healthy noodle bowl featuring edamame, crisp vegetables, and a savory sesame-ginger dressing.
Ingredients
- 12 oz edamame, shelled
- 12 oz ramen noodles
- 2 carrots
- 1 cucumber
- 1 red bell pepper
- 3 scallions
- ¼ cup soy sauce
- 3 tbsp rice vinegar
- 2 tbsp sesame oil
- 1 tbsp fresh ginger, grated
- 2 clove garlic, minced
- 1 tbsp honey or maple syrup (optional)
- 1 tbsp sesame seeds (optional)
Steps
- Cook ramen noodles according to package directions. Drain and rinse with cold water to prevent sticking, then set aside.
- While noodles cook, prepare the vegetables: julienne the carrots, cucumber, and red bell pepper. Thinly slice the scallions.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and optional honey or maple syrup to create the dressing.
- In a large bowl, combine the cooked noodles, shelled edamame, julienned carrots, cucumber, red bell pepper, and most of the sliced scallions.
- Pour the dressing over the noodle mixture and toss gently to ensure all ingredients are well coated.
- Divide the edamame noodle bowl among four serving bowls. Garnish with remaining sliced scallions and optional sesame seeds before serving.
