Ingredients
- ¾ lb chicken breast
- 6 cup chicken broth
- 3 eggs
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp ginger, grated (optional)
- 2 clove garlic, minced (optional)
- 2 green onions (optional)
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Dice the chicken breast into small, bite-sized pieces. Whisk the eggs in a small bowl. In another small bowl, combine cornstarch and water to create a slurry.
- In a large pot, bring chicken broth to a simmer over medium heat. Add the diced chicken, ginger (if using), and garlic (if using). Cook for 5-7 minutes until chicken is cooked through.
- Stir in the soy sauce, sesame oil, salt, and pepper. Taste and adjust seasoning as needed.
- Slowly whisk in the cornstarch slurry into the simmering soup until it thickens slightly to your desired consistency.
