Fish Burrito
A fresh and flavorful fish burrito packed with flaky white fish, crisp cabbage, and a zesty lime crema.
Ingredients
- 1½ lb cod fillets
- 8 flour tortillas
- ½ head red cabbage
- 2 avocado
- 2 lime
- ¼ bunch cilantro
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 1 tsp hot sauce (optional)
Steps
- Pat fish fillets dry and season with chili powder, cumin, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook fish for 3-4 minutes per side, or until cooked through and flaky. Flake the fish into pieces.
- While fish cooks, thinly slice the red cabbage. Dice the avocado. Chop the cilantro.
- In a small bowl, whisk together sour cream, mayonnaise, juice from 1 lime, and a pinch of salt and pepper to make the lime crema. Add hot sauce if desired.
- Warm tortillas according to package directions. Spread a spoonful of lime crema on each tortilla.
- Divide the flaked fish, shredded cabbage, and diced avocado among the tortillas. Sprinkle with fresh cilantro.
- Fold in the sides of each tortilla, then roll up tightly to form burritos.
- Serve immediately with extra lime wedges if desired.
