General Tso's Shrimp

Ingredients

  • 1½ lb large shrimp, peeled and deveined
  • ½ cup cornstarch
  • 1 egg
  • 2 cup vegetable oil
  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp hoisin sauce
  • 2 tbsp sugar
  • 1 tsp sesame oil
  • 2 clove garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ tsp red pepper flakes (optional)
  • ¼ cup water
  • 2 green onions, sliced (optional)
  • 1 tsp sesame seeds (optional)

Steps

  1. Pat the shrimp dry. In a bowl, whisk the egg. In another bowl, place the cornstarch. Dip each shrimp in egg, then dredge in cornstarch, ensuring it's fully coated.
  2. In a large wok or deep skillet, heat the vegetable oil to 350°F (175°C). Fry the shrimp in batches for 2-3 minutes per side, until golden brown and crispy. Remove with a slotted spoon and place on a wire rack to drain.
  3. In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, sesame oil, garlic, ginger, red pepper flakes (if using), and water. Set aside.
  4. Carefully pour out all but 1 tablespoon of oil from the wok. Add the sauce mixture to the wok and bring to a simmer, stirring until it thickens slightly, about 2-3 minutes.
  5. Add the fried shrimp to the wok and toss gently to coat evenly with the sauce.
  6. Serve immediately, garnished with sliced green onions and sesame seeds if desired.
