General Tso's Shrimp
Crispy fried shrimp tossed in a sweet, savory, and slightly spicy General Tso's sauce, perfect for an easy weeknight meal.
Ingredients
- 1½ lb large shrimp, peeled and deveined
- ½ cup cornstarch
- 1 egg
- 2 cup vegetable oil
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 2 tbsp hoisin sauce
- 2 tbsp sugar
- 1 tsp sesame oil
- 2 clove garlic, minced
- 1 tbsp fresh ginger, grated
- ½ tsp red pepper flakes (optional)
- ¼ cup water
- 2 green onions, sliced (optional)
- 1 tsp sesame seeds (optional)
Steps
- Pat the shrimp dry. In a bowl, whisk the egg. In another bowl, place the cornstarch. Dip each shrimp in egg, then dredge in cornstarch, ensuring it's fully coated.
- In a large wok or deep skillet, heat the vegetable oil to 350°F (175°C). Fry the shrimp in batches for 2-3 minutes per side, until golden brown and crispy. Remove with a slotted spoon and place on a wire rack to drain.
- In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, sesame oil, garlic, ginger, red pepper flakes (if using), and water. Set aside.
- Carefully pour out all but 1 tablespoon of oil from the wok. Add the sauce mixture to the wok and bring to a simmer, stirring until it thickens slightly, about 2-3 minutes.
- Add the fried shrimp to the wok and toss gently to coat evenly with the sauce.
- Serve immediately, garnished with sliced green onions and sesame seeds if desired.
