Ginger Pork Stir-fry
A quick and flavorful stir-fry featuring tender pork and crisp vegetables in a savory ginger-soy sauce.
Ingredients
- 1¼ lb pork loin
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 2 tbsp fresh ginger
- 4 clove garlic
- 1 tbsp cornstarch
- 4 cup broccoli florets
- 2 carrots
- 1 bell pepper
- 2 tbsp vegetable oil
- 2 scallions (optional)
- 1 tsp sesame seeds (optional)
- 3 cup cooked rice (optional)
Steps
- Slice pork loin into thin strips. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, and cornstarch. Add pork and marinate for 10-15 minutes.
- Chop broccoli into bite-sized florets. Julienne carrots and bell pepper.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add marinated pork and stir-fry until browned and cooked through, about 3-5 minutes. Remove pork from skillet and set aside.
- Add remaining 1 tablespoon of vegetable oil to the skillet. Add broccoli, carrots, and bell pepper. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Return cooked pork to the skillet with the vegetables. Toss everything together to combine and heat through, about 1-2 minutes.
- Serve immediately over cooked rice, if desired. Garnish with sliced scallions and sesame seeds, if using.
