Ingredients

  • 1 lb ground beef
  • 1 egg
  • ½ cup breadcrumbs
  • ½ onion
  • 2 cloves garlic
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 28 oz crushed tomatoes
  • 1 cup beef broth
  • 1½ cups orzo pasta
  • ¼ cup feta cheese (optional)

Steps

  1. In a large bowl, combine ground beef, egg, breadcrumbs, finely diced half onion, minced garlic, oregano, chopped parsley, salt, and pepper. Mix until just combined, then form into 1-inch meatballs.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the meatballs on all sides, working in batches if necessary, then remove and set aside.
  3. Pour crushed tomatoes and beef broth into the skillet, scraping up any browned bits from the bottom. Bring to a simmer.
  4. Return the browned meatballs to the sauce. Reduce heat to low, cover, and simmer for 15-20 minutes, or until meatballs are cooked through.
  5. Stir in the orzo pasta. Cover and continue to simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
  6. Taste and adjust seasoning if needed. Serve hot, garnished with crumbled feta cheese if desired.
