Greek Meatballs with Orzo
Savory Greek-spiced meatballs simmered in a rich tomato sauce, served over tender orzo pasta for a comforting and satisfying meal.
Ingredients
- 1 lb ground beef
- 1 egg
- ½ cup breadcrumbs
- ½ onion
- 2 cloves garlic
- 1 tsp dried oregano
- 2 tbsp fresh parsley
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 28 oz crushed tomatoes
- 1 cup beef broth
- 1½ cups orzo pasta
- ¼ cup feta cheese (optional)
Steps
- In a large bowl, combine ground beef, egg, breadcrumbs, finely diced half onion, minced garlic, oregano, chopped parsley, salt, and pepper. Mix until just combined, then form into 1-inch meatballs.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Brown the meatballs on all sides, working in batches if necessary, then remove and set aside.
- Pour crushed tomatoes and beef broth into the skillet, scraping up any browned bits from the bottom. Bring to a simmer.
- Return the browned meatballs to the sauce. Reduce heat to low, cover, and simmer for 15-20 minutes, or until meatballs are cooked through.
- Stir in the orzo pasta. Cover and continue to simmer for 10-12 minutes, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed.
- Taste and adjust seasoning if needed. Serve hot, garnished with crumbled feta cheese if desired.
