Greek Salad with Grilled Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 1 head romaine lettuce
  • 1 cucumber
  • 2 roma tomatoes
  • ½ red onion
  • ½ cup Kalamata olives
  • 4 oz feta cheese
  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper

Steps

  1. Pat chicken breasts dry and season with salt, pepper, garlic powder, and half of the oregano. Grill chicken over medium-high heat for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
  2. While chicken cooks, chop romaine lettuce, cucumber, tomatoes, and red onion. Crumble feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, remaining oregano, salt, and pepper to make the dressing.
  4. Combine lettuce, cucumber, tomatoes, red onion, and Kalamata olives in a large salad bowl.
  5. Pour dressing over the salad and toss gently to coat.
  6. Top the salad with crumbled feta cheese and sliced grilled chicken. Serve immediately.
