Greek Salad with Grilled Chicken
A refreshing and healthy Greek salad topped with tender grilled chicken, perfect for a light meal.
Ingredients
- 1½ lb boneless, skinless chicken breasts
- 1 head romaine lettuce
- 1 cucumber
- 2 roma tomatoes
- ½ red onion
- ½ cup Kalamata olives
- 4 oz feta cheese
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Steps
- Pat chicken breasts dry and season with salt, pepper, garlic powder, and half of the oregano. Grill chicken over medium-high heat for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes, then slice.
- While chicken cooks, chop romaine lettuce, cucumber, tomatoes, and red onion. Crumble feta cheese.
- In a small bowl, whisk together olive oil, red wine vinegar, remaining oregano, salt, and pepper to make the dressing.
- Combine lettuce, cucumber, tomatoes, red onion, and Kalamata olives in a large salad bowl.
- Pour dressing over the salad and toss gently to coat.
- Top the salad with crumbled feta cheese and sliced grilled chicken. Serve immediately.
