Grilled Halloumi Salad

Ingredients

  • 16 oz Halloumi cheese
  • 5 oz Mixed greens
  • 1 pint Cherry tomatoes
  • 1 Cucumber
  • ½ Red onion
  • ¼ cup Olive oil
  • 1 Lemon
  • ¼ cup Fresh parsley
  • ½ tsp Dried oregano
  • ½ tsp Salt
  • ¼ tsp Black pepper
  • ½ cup Kalamata olives (optional)

Steps

  1. Prepare the vegetables: Halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and roughly chop the fresh parsley.
  2. Make the dressing: In a small bowl, whisk together 3 tablespoons of olive oil, the juice of one lemon, chopped parsley, oregano, salt, and pepper.
  3. Slice the halloumi cheese into 1/2-inch thick pieces.
  4. Heat a grill or grill pan over medium-high heat. Brush the halloumi slices with the remaining 1 tablespoon of olive oil.
  5. Grill the halloumi for 2-3 minutes per side, or until golden brown with visible grill marks.
  6. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Add Kalamata olives if using.
  7. Add the grilled halloumi to the salad. Drizzle generously with the lemon-herb dressing and toss gently to combine. Serve immediately.
