Grilled Halloumi Salad
A delightful and satisfying salad featuring salty, grilled halloumi cheese, fresh greens, and a vibrant lemon-herb dressing.
Ingredients
- 16 oz Halloumi cheese
- 5 oz Mixed greens
- 1 pint Cherry tomatoes
- 1 Cucumber
- ½ Red onion
- ¼ cup Olive oil
- 1 Lemon
- ¼ cup Fresh parsley
- ½ tsp Dried oregano
- ½ tsp Salt
- ¼ tsp Black pepper
- ½ cup Kalamata olives (optional)
Steps
- Prepare the vegetables: Halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and roughly chop the fresh parsley.
- Make the dressing: In a small bowl, whisk together 3 tablespoons of olive oil, the juice of one lemon, chopped parsley, oregano, salt, and pepper.
- Slice the halloumi cheese into 1/2-inch thick pieces.
- Heat a grill or grill pan over medium-high heat. Brush the halloumi slices with the remaining 1 tablespoon of olive oil.
- Grill the halloumi for 2-3 minutes per side, or until golden brown with visible grill marks.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Add Kalamata olives if using.
- Add the grilled halloumi to the salad. Drizzle generously with the lemon-herb dressing and toss gently to combine. Serve immediately.
