Ground Turkey Enchiladas

Flavorful ground turkey and cheese rolled in tortillas, baked in a rich red enchilada sauce for a comforting meal.

Ingredients

  • 1 lb ground turkey
  • ½ yellow onion
  • 2 cloves garlic
  • 19 oz enchilada sauce
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas
  • 2 tbsp taco seasoning
  • 1 tbsp olive oil
  • ¼ cup cilantro (optional)
  • ½ cup sour cream (optional)

Steps

  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  3. Add ground turkey to the skillet and cook, breaking it apart, until no longer pink. Drain any excess grease. Stir in taco seasoning.
  4. Pour about 1/2 cup of enchilada sauce into the bottom of the prepared baking dish.
  5. Warm tortillas slightly (microwave for 30 seconds or quickly dip in warm enchilada sauce) to make them pliable. Fill each tortilla with about 1/4 cup of the turkey mixture and a sprinkle of cheese. Roll up tightly and place seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the rolled enchiladas. Top generously with the remaining shredded cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is hot.
  8. Garnish with fresh cilantro and a dollop of sour cream, if desired, before serving.
