Ground Turkey Enchiladas
Flavorful ground turkey and cheese rolled in tortillas, baked in a rich red enchilada sauce for a comforting meal.
Ingredients
- 1 lb ground turkey
- ½ yellow onion
- 2 cloves garlic
- 19 oz enchilada sauce
- 2 cups shredded cheddar cheese
- 8 corn tortillas
- 2 tbsp taco seasoning
- 1 tbsp olive oil
- ¼ cup cilantro (optional)
- ½ cup sour cream (optional)
Steps
- Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Add ground turkey to the skillet and cook, breaking it apart, until no longer pink. Drain any excess grease. Stir in taco seasoning.
- Pour about 1/2 cup of enchilada sauce into the bottom of the prepared baking dish.
- Warm tortillas slightly (microwave for 30 seconds or quickly dip in warm enchilada sauce) to make them pliable. Fill each tortilla with about 1/4 cup of the turkey mixture and a sprinkle of cheese. Roll up tightly and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled enchiladas. Top generously with the remaining shredded cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is hot.
- Garnish with fresh cilantro and a dollop of sour cream, if desired, before serving.
