Ground Turkey Lettuce Wraps

Ingredients

  • 1 lb ground turkey
  • 1 head butter lettuce
  • 3 garlic cloves
  • 1 tbsp ginger
  • 8 oz water chestnuts
  • 4 scallions
  • 4 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • ½ tsp sriracha (optional)
  • 1 tbsp olive oil
  • 1 tsp sesame seeds (optional)

Steps

  1. Wash and separate lettuce leaves; set aside. Mince garlic and ginger. Drain and finely dice water chestnuts. Slice scallions, separating white and green parts.
  2. Heat olive oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add minced garlic, ginger, and white parts of scallions to the skillet. Cook for 1-2 minutes until fragrant.
  4. Stir in soy sauce, hoisin sauce, rice vinegar, sesame oil, and sriracha (if using). Add diced water chestnuts and cook for another 2-3 minutes, allowing the sauce to thicken slightly.
  5. Remove from heat and stir in the green parts of the scallions.
  6. Spoon the turkey mixture into the prepared lettuce cups. Garnish with sesame seeds if desired.
  7. Serve immediately.
